1: "Coeur de Neufchatel" from Normandy

This very popular heart-shaped cheese was long ago offered to English soldiers by Norman peasant women. What we love most about it is its white moldy bark and chalky interior. Of course it doesn't taste like chalk but rather very aromatic to nutty and spicy.

2. "Morbier" from the Jura

The Morbier is one of the most beautiful things in the Jura. It has the aroma of a creamy, half-dry, half-sticky dough with a distinctive, nutty flavor and is one of the Augustas Box crew's favorite cheeses. This special cheese can be enjoyed just as well cold as warm. A delicacy! There are a lot of recipes for its use and it goes perfectly with white wines. You can find out more about the mysterious line in the middle here in our blog.

3. "Pérail" from the Rouerge region

The sheep can graze the best herbs on the high mountain pastures of the Causses. On the alpine farms, the cheese is still made by hand and the long-standing traditions are maintained.
A velvety surface with fine mold fluff envelops the delicate white dough, which exudes a subtle aroma. Even the sight of the Pérail is a temptation!!

4. "Tomme à la bière" from Savoie (large box only)

At first it is a normal Tomme de Savoie, but it is rubbed with water, salt, beer from the Bauges and hops and after two months of aging you can feel the bitterness of the hops and the beer. This Tomme will taste perfect with the Sauvignon de Touraine.

5. "St. Félicien" from the Isère region (large box only)

One of our favorites, a cheese for connoisseurs! Creamy, powerful, delicious and sometimes flowing so that you can enjoy it with a spoon, for example on a nice country bread. There are many adjectives to describe this fatty cheese (60% fat in dry matter).
It is the cousin of St. Marcellin, but even creamier and larger in its version. For a while it was made from goat cheese, but from now on it is made only from cow's milk.

6. "Tomme de Chartreuse" from the Isère region (large box only)

Grapes: Sauvignon
Winery: Domaine Barbou

A classic wine of French wine culture, this Sauvignon Touraine. It is the ideal partner for cheese with its floral and delicate aromas. A dry wine, very fruity, very balanced. Its taste stays in your mouth for a long time.
It is a good companion for the Pérail or the Morbier.

Red wine "Les 3 Soeurs" from the Touraine region (large box only)

Grapes: 50% Grenache, 30% Syrah, 20% Carignan
Winery: Domaine Barbou

This wine has a beautiful dark color. It smells strong, fruity (cherries) and spicy (thyme or rosemary). In the mouth you discover a very rich, intense and warm taste. A wine of the sun that warms up the mood and promises a very nice tasting, especially when accompanied by a beautiful Tomme from the mountains.

"Saucisson à l'abondance" from Savoie (only if ordered)

The Abondance is a cheese from Savoie, smaller than the Beaufort, but also with this concave shape. It is used a lot in mountain cuisine, such as fondue Savoyarde.
Today you can find it in an artisanal sausage from Savoie. Enjoy it!
