Cheese 1: Tomme du Ferrin

Raw cow's milk cheese from the north of France

The Vinage farm, which produces this beautiful Saint Paulin-type Tomme, is part of the new farms that combine tradition and modernity. The cheese is a pressed, uncooked dough with a washed rind. The consistency is soft and has a mild taste. We let it mature a bit in our cellar so that it becomes even more aromatic.

Cheese 2: Coeur de Neufchâtel

This very popular heart-shaped cheese was long ago offered to English soldiers by Norman peasant women. We love its white moldy bark and chalky interior. It tastes aromatic and nutty. This cheese goes very well with the two wines included in your box.

Cheese 3: Mountain cheese 21 months

Our cheese master Sébastien met Anton at Cheese Berlin and then in his maturing cellars in the heart of Vienna. Anton spends the whole summer on the Alp to make his cheese. They are then brought down to Vienna, where they can mature in the fourth basement of a house. There is also a wine warehouse here, so a perfect match between the wine and the cheese. This mountain cheese matures there for 21 months.

Cheese 4: Roquefort

Lovers' Cheese is a monument to French cheese. It is always made in the limestone caves of the same name. Its taste is incomparable, powerful and creamy at the same time. You can tell that it comes from the plateaus. Don't hesitate to try it with an old rum that is a little sweet or with a sweet wine. Simply delicious, a gastronomic wonder.

In this beautiful region in the south of France, Sébastien received his first training in viticulture with the Fabre family. The vines of L'Arques (AOP Duché d'Uzes) bring us very beautiful aromatic wines. Together we will discover a grape variety, Chardonnay, which reveals its fruity and floral side in the Pays D'Oc. This wine goes wonderfully with cheese because it reveals its aromas.

If you're a fan of comic stories, then you'll definitely recognize the castle that inspired Hergé's Tintin adventures. But let's talk about wine, we have a very nice marriage of Pinot Noir and Gamay that offers us a light and fruity wine. Quite gourmet to enjoy in the mouth with a slightly peppery finish.

You don't see blood sausage like this very often. In the Basque Country it is made with a puree of onions, garlic, fresh leeks and thyme flowers. Add a little allspice to underline the unique taste.
